Chilled Salad
If you regularly buy too much at the farmer’s market and the results crowd out your fridge all week here’s one way to cut the clutter and help ensure you don’t end up throwing a lot out. Spend half an hour blanching your haul in a single pot of heavily salted water, dropping each batch of cooked vegetables into a fresh bowl of ice water. Seal ’em up and use throughout the week. Then make something like this.
My whatever-works kind of farmer’s market salad. The one pictured has blanched asparagus, peas, favas; boiled potatoes, chickpeas and egg; ricotta, anchovies, capers and basil ripped from an indestructable plant that’s been surviving on my sill for five months. I doused it in good olive oil, salt, pepper. (Sometimes I dress it in a vinaigrette of torn basil leaves pounded with a clove of garlic, Txakoli vinegar, salt, pepper and olive oil.) Serve it cool.
It also works great with green beans, tinned tuna, shreds of cured ham, chunks of salami, flakes of Comté, a squeeze of lemon, and probably a hundred other things.

Earlier this year, the Deli’s cheese experts, Sean and Mike, got together with Uplands’ cheesemaker, Andy Hatch, and sampled over twenty batches of Pleasant Ridge Reserve from the 2011 season. From there, they narrowed it down to six cheese wheels, each representing a day’s batch of about sixty wheels.

But, we still need to choose the best of the best. And that’s where our guests can help!
Join us Thursday in tasting samples from these six finalist wheels. We want to hear what you taste, and what you think. Your comments will help us select the two best wheels (and batches) to sell in the Deli in the coming year.

- Get over the hump! Wednesdays are special at the Zingerman’s Creamery. If you buy any two Zingerman’s Gelato, you’ll get a third FREE! Who can argue with free?
- Come to the Westside Farmers’ Market! It’s happening every Thursday, 3p-7p at the Zingerman’s Roadhouse! 30-40 vendors every week featuring fresh produce, meat, baked goods, and much, much more!

- This Thursday evening, the Zingerman’s Deli will host a tasting of delicious Uplands Pleasant Ridge Reserve cheese from 630-730pm. This a robust cheese made in the alpine tradition. We have six wheels but we only need two. Stop by and help us select the best of the best!
- Fridays and Saturdays at the Zingerman’s Bakehouse also mean Special Bakes, limited-edition loaves available for just a weekend. This weekend it’s Barches! Barches (bar-kess) is a traditional Hungarian bread like challah, but made with milk. Our version is mixed with Hungarian sweet paprika giving it a warm orange color and a faint spice note that builds on your tongue as you eat it. It’s really enjoyable all by itself or try it along side a hearty soup or stew.
- Next Monday is Mozzarella Monday at the Zingerman’s Creamery! $2 off the per pound price for Fresh, Smoked, or Burrata! Two bucks off!
