Unfortunately, Michigan is not known for having the right conditions for the hard wheat that is required for some of the products. The Dakota's and colder climates like Minnesota are required to "stress" the wheat properly. Maybe using a local "agent" or distributor would allow you to at least do some local business while still getting the actual product that you need. The soft wheat produced by Star of West is an awesome product! You make amazing products! Keep it up!!!

I buy your breads exclusively through a local fruit market in out area. I am studying to be a nutritionist and have found that breads with dough conditioners exacerbate conditions such as fibromyalgia, diabetes, hypoglycemia, and spinal health. Thank you for providing a quality product without dough conditioners (mono and diglycerides or azodicarbonamide). And also for contributing to the re-establishment of local farming practices. You are directly contributing to the health of our society and the planet.

I was very happy to see that you all are striving toward locally grown wheat. I must say that I haven't been in there since 1996 and believe me when I say I missi it! I call Austin Tx. home now but always mention what a fabulous Deli you all run. Keep up the good work.

Right now we're only teaching baking classes and pretty much all of them are vegetarian (though not vegan). We are only located in Ann Arbor (but it's a great place to visit!).
