The Farm has hosted weddings, charity events, and even this year’s Camp Bacon Main Event! But Cornman Farms is more that an events space: it’s an authentic working farm. So we’ve created a suite of tours that will allow our guests to learn about our farming practices, animal husbandry philosophies, and historic significance from the folks who actually run the farm. First Sunday Tour at Zingerman’s Creamery

Join our cheese and gelato makers Sunday, Juy 6, 2pm on an hour-long adventure to see how we transform local milk into delicious cheese and gelato. On this tour, you will observe mozzarella stretching and taste freshly made gelato. You’ll sample our selection of cow and goat’s milk cheese while learning from Creamery staff how the cheese is made. Tours happen on the first Sunday of each month!

Join us tonight, 6pm, for Hungarian food, wine and personal stories about life in this still emerging Eastern European country. Carolyn and Gábor own the premier food tour company in Hungary today, Taste Hungary, and Carolyn is the author of the rich and highly informative book The Food and Wine Lover’s Guide to Hungary. Wehave been traveling and tasting with them in Hungary for four years,  and last fall we partnered with them to lead our first public food tour to Hungary (our next Hungary food tour is May 2015). Winemaking began in Hungary with the Romans and today is a thriving industry with both small and large producers making a full range of dry red and white wines as well as famous sweet dessert wines. If you think Hungarian wine is Bull’s Blood come and learn the more in-depth story. Enjoy a guided tasting of 5 wines along with Hungarian appetizers. One of our favorite parts of traveling with Gábor is listening to him tell stories from his family’s past. They bring alive the struggles of WWII, the challenges of a doctor’s family sent to the countryside during communism and insight about how he and Carolyn, entrepreneurs, navigate in an economy still trying to figure out capitalism. While we hear all of this there are always foods mentioned and references to Gabor’s mother’s cooking. On Wednesday, June 25, 6pm, Gábor and Carolyn will share these stories as well as demonstrate how to make at least 3 of Gábor’s childhood favorite homey dishes: porkolt (a stew), lecsó, and sour cherry cake. We’ll listen, watch, taste and enjoy some Hungarian wine together. This class is a demonstration and tasting only.

Gary Nabhan takes us on a vivid and far-ranging journey across time and space in this fascinating look at the relationship between the spice trade and culinary imperialism. Drawing on his own family’s history as spice traders, as well as travel narratives, historical accounts, and his expertise as an ethnobotanist, he will share the critical roles that Semitic peoples and desert floras had in setting the stage for globalized spice trade.
Join us tonight at 7pm as Gary and Chef Alex Young have created a menu that emphasizes local, traditional, and sustainable ingredients. After dinner, Gary will discuss the importance of biodiversity and sustainable practices in growing and maintaining a bountiful, nutritious food supply.

Gary Paul Nabhan is an internationally celebrated nature writer, food and farming activist, and proponent of conserving the links between biodiversity and cultural diversity. He has been honored as a pioneer and creative force in the “local food movement” and seed saving community by Utne Reader, Mother Earth News, New York Times, Bioneers and Time magazine.

We are again offering this fine coffee from Jose Herminzul Ninco Lara of Finca Monte Frio located in the Hobo Municipality, Huila region. Microlots from Jose Ninco’s estate placed 5th in the Colombia 2012 Cup of Excellence. For this month, we have changed the roast pro le dramatically – choosing to highlight the sweetness and body inherent in the bean. We’ve brought out more of the sugar and less of the acidity. It has notes of baker’s chocolate, honey and soft herbs and is exceptional in a Chemex or Clever filter. A Presspot and Syphon will bring out a slightly brighter taffy flavor.

On Saturday, May 31, the Main Eventis changing venues this year and moving out to Cornman Farms in Dexter, MI.The festivities begin at 7:30 am with an amazing breakfast featuring plenty of bacon! We have a full day planned with special guests Bob and Tanya Nueske, Raul Martin, Amy Emberling, Nancy Newsom and more. The Main Event is a fundraiser for the Southern Foodways Alliance, an organization based at theUniversity of Mississippi that documents, studies, and celebrates the diverse food cultures of the changing American South. “It’s my favorite food-based educational non-profit by a mile,” says Ari.

Happy PigBacon Street Fair at the Ann Arbor Farmer’s Market

On Sunday, June 111am – 2pm, vendors from Zingerman’s and many other businesses will be on hand sampling and selling their favorite bacon inspired creations and the event will benefit Washtenaw County 4H, an organization near and dear to Zingerman’s Roadhouse managing partner and chef Alex Young. “If you’d told me 10 years ago that I’d add farmer to my list of job titles I would’ve said you’re crazy. But, well, now I’m a farmer and the partnership we’ve developed with 4H has been indispensable for us at Cornman Farms and a big thing for my family, too. I’m really happy to help support them.”

Two New Treats at Zingerman’s Bakehouse

Raspberry Patti Pockets

These precious pocket pies are ideal for breakfast. Yes, you have our permission to have pie for breakfast! Start your day, or end it too, with a smile from one of these handy little pie squares. We named them after Patti, one of our long time pastry kitchen managers. We take our flakiest butter pie dough, fill it with seedless raspberry preserves, bake it a golden brown and garnished with a drizzle of raspberry glaze. They just taste so good!

Tokaji (say tow-kai) Cream Cake

Another distinctive dessert from Hungary, “the land of 10,000 pastry lovers”. Auguszta Auguszt, fifth generation baker of one of the oldest baking families in Budapest today, published a recipe in her family’s book. We enjoyed it so much that we adapted the recipe to come up with our own American Hungarian version. This torta is an interesting combination of flavors and special ingredients starting with Tokaji wine, from the Tokaj wine region of Hungary. We’re using a sweet topaz-colored variety, 5 Puttyonos Aszú. The wine and Guernsey Dairy heavy cream make the cream that fills and covers the cake. Inside are layers of soft vanilla chiffon cake and chopped raspberries. The outside is garnished with sliced toasted almonds and whole raspberries. The first few test batches of this cake were quickly devoured by our staff. We invite you to taste it for yourself!

Learn the keys to successful coffee brewing using a wide variety of brewing methods from filter drip to syphon pot. On Sunday, May 25, 1pm, we will take a single coffee and brew it 6 to 8 different ways, each producing a unique taste. We’ll learn the proper proportions and technique for each and discuss the merits and differences of each style. Join us!

The folks down at the Southern Foodways Alliance have done an incredible job capturing the stories behind some of our most beloved Southern food makers in a series of award-winning short documentaries. Join us on Wednesday, May 28, 630pm as we watch a few films and enjoy foods from the producers featured. Come with an appetite and be ready to fall in love with Southern foodways!

Zingerman’s 5th Annual Camp Bacon Begins!

On Thursday, May 29, 7pm, Camp kicks off with a very special event featuring “the Ham Lady,” Nancy Newsom who will oversee a feast centered on ham, bacon, and all the good things that come from a pig. Nancy’s lauded country ham and aged prosciutto will be the star attractions, and James Beard award-winning chef Alex Young will prepare a menu highlighting Newsom’s delicious meats! This dinner brings in bacon and ham lovers from all over the country!

On Friday, May 30, instructors at our hands-on teaching bakery at Zingerman’s Bakehouse will share the finer points of baking with everyone’s favorite meat. Guests will use the power of bacon to flavor amazing baked goods including a version of our popular peppered bacon farm bread, bacon cheddar scones, and bacon pecan sandy cookies. Attendees will leave BAKE! with tested recipes, the knowledge to recreate them at home, and everything they made in class.

bacon-carCamp Bacon Main Event at Zingerman’s Cornman Farms

On Saturday, May 31, the Main Eventis changing venues this year and moving out to Cornman Farms in Dexter, MI. The festivities begin at 7:30 am with an amazing breakfast featuring plenty of bacon! We have a full day planned with special guests Bob and Tanya Nueske, Raul Martin, Amy Emberling, Nancy Newsom and more. The Main Event is a fundraiser for the Southern Foodways Alliance, an organization based at the University of Mississippi that documents, studies, and celebrates the diverse food cultures of the changing American South. “It’s my favorite food-based educational non-profit by a mile,” says Ari.

Happy PigBacon Street Fair at the Ann Arbor Farmer’s Market

On Sunday, June 1, 11am – 2pm, vendors from Zingerman’s and many other businesses will be on hand sampling and selling their favorite bacon inspired creations and the event will benefit Washtenaw County 4H, an organization near and dear to Zingerman’s Roadhouse managing partner and chef Alex Young. “If you’d told me 10 years ago that I’d add farmer to my list of job titles I would’ve said you’re crazy. But, well, now I’m a farmer and the partnership we’ve developed with 4H has been indispensable for us at Cornman Farms and a big thing for my family, too. I’m really happy to help support them.”
