January Sandwich at Zingerman’s Deli
The Deli Sandwich of the Month is the Bowker Brothers Bean Trilogy! This month we wanted to feature the delightfully crisp, pickled green beans from Rick’s Picks, which pack a spicy cayenne punch. They’re well seasoned with a hint of dill, which we instantly realized would be a great companion with our chicken salad. Then we spread American Spoon’s whole seed mustard – which also provides a little heat and a lot of texture – on toasted Rustic Italian bread. All together they make a snappy, bright & comforting combination.

January Roaster’s Pick at Zingerman’s Coffee Company
Our selection this month is Guatemalan Coban. In 1988 in Guatemala, Horst Spitzke started planting coffee at his beautiful farm, Flor del Rosario. His large farm of 550 hectares (1,400 acres) celebrates the biodiversity of the region. It is a natural wonder of flora and fauna where he also raises orchids, cardamoms and Monja Blanca, Guatemala’s national flower. Our coffee, La Cascada (“The Waterfall”) is named for the 100-meter natural spring waterfall located on the farm. The tropical rain forest environment seems to produce a coffee with citrus brightness that is striking for the region. This coffee is superbly well balanced with a nice sweetness. It has light floral blossom aromas, cocoa and citrus flavors and a lovely finish. It is a staff favorite brewed in a Chemex or an Aeropress and the syphon pot really brings out the fruit and soft herbal notes.

Layers of fluffy yellow chiffon cake, filled with our own vanilla bean pastry cream and raspberry preserves, covered in vanilla butter cream and white chocolate shavings. New Drink at Zingerman’s Coffee Company
This New Year we’ve gone Medieval with our monthly barista drink: The Pomander Mocha. Back in a time when witches and plagues were feared throughout Europe, folks wore pomanders to keep safe. Their pomanders were balled perfumes hung from belts or chains. Some keep this tradition alive today, studding oranges with cloves and dangling them from brightly colored ribbons. These modern charms fill a home with a spicy citrus aroma. To create our Pomander Mocha, we take cloves and orange oil, warm them in Calder’s natural milk, and then pour them into Callebaut dark chocolate and our Espresso Blend #1. This is truly a mocha that will enthrall your senses with fruit and spice. Join us and ward off the cold melancholy of winter with this delicious take on a Medieval remedy. ZingTrain Speaker Series

Zingerman’s Mail Order partner Tom Root is the special guest tomorrow at our morning Speaker Series. In 2004 Tom was introduced to the concepts of Lean Manufacturing popularized by Toyota. Building on his experience with open book finance, Tom worked to bring the philosophy of continuous improvement and waste elimination to Mail Order. For the last 10 years Tom has been practicing Lean thinking though process improvement, class development and teaching. Tom will share his experience and knowledge of Lean in this enlightening session.

Chocolate Christmas Ornament at Zingerman’s Mail Order
