Now at Zingerman’s Mail Order: Rosh Hashanah Challah!
Each fall Zingerman’s Bakehouse releases special limited edition challahs for Rosh Hashanah, the Jewish New Year.
It’s traditional for Eastern European Jews to bake challah in round, turban-like loaves to signify the desire for a full, complete year. Each is baked to order by hand, arriving wrapped in plastic and paper. They’re gorgeous, the color of toasted saffron, and the flavors are rich and sweet—everything the New Year should be.

  • Plain Turbans: Keeping with tradition, we sweeten all the egg and flour loaves with a healthy dose of Michigan clover honey.
  • Raisin Turbans: To make the New Year even richer, on top of the clover honey we add a generous portion of extra-large Red Flame raisins soaked in Myers Dark Rum®.
  • Moroccan Style: Braided—not round—brushed with honey and rolled in anise, poppy and sesame seeds. No raisins.

In 2013, Rosh Hashanah begins the evening of September 4 and continues through September 6.  These challahs are available to ship September 3-11.

The August Roaster’s Pick at Zingerman’s Coffee Company is Sumatra Ulos Batak Peaberry!
This fine Sumatran coffee comes from the Lintong region from the southern part of Lake Toba. Ulos is the name of the traditional cloth worn by the Batak of North Sumatra. It comes from Lintongnihuta in the Silaban village. Coffee Company Partner Allen says:

We roast it a little darker than most of our coffees to bring out some of the intense flavors. It benefits from the additional heat. It has a nice sweetness of grapefruit and leather with slightly smokey notes upon cooling. The finish is clean and nice. We loved it in a press pot and an Aeropress, both of which accentuate the intense body this coffee has to offer.

Cattle Drive to Chicago Dinner at the Roadhouse
Wednesday, July 31, 7pm (tomorrow!)
Cattle drives were a major part of the American west, particularly between 1866 and 1886 when over 20 million cattle were herded from Texas to railheads in Kansas for shipments and then to Stockyards in Chicago and points further east. Through these cattle drives, the cowboy became an iconic figure of the American west. Chef Alex is exploring the path of the cattle drive, celebrating BBQ and other foods found from Texas to Chicago. Renowned artist and olive oil producer Michael Zyw visits the Zingerman’s Events on 4th on Tuesday, August 6, 6:30 pm. to share his knowledge of art, the food of Tuscany, and making terrific olive oil.
Michael’s Poggio Lamentano was a pioneer; it was already winning acclaim back in the early ’60s, an era when extra virgin olive was just a gleam in the eye of most of the world’s gourmets. The food writers of that era, crafting their views on the aesthetics of great food long before there was a food network or Facebook, fell in love with it. Elizabeth David called it, “one of the supreme pleasures of my life.” MFK Fisher was a big fan as well: “Excellent in every way and exactly to my taste.” The oil is classically Tuscan—peppery, green, big, beautiful, delicious.

Crafting a world-class oil is a huge achievement. But, working with the olive trees is Michael Zyw’s morning work. In the afternoon’s he’s an artist whose work on canvas and with glass is as exceptional as his oil. Michael’s art, as was that of his father (Alexander Zyw), been praised throughout the art world.

Candyman Charlie Frank isn’t reinventing the wheel, just making it more delicious. The latest creation from his candy kitchen is a flavor-charged upgrade of classic peanut brittle.
Jumbo Runner peanuts jut like boulders from a shiny, golden candy sea. The texture looks silky but shatters in crisp shards with each bite. To achieve this consistency Charlie makes small batches by hand with a watchful eye. This is stovetop brittle, not factory gristle, with butterscotch-brown flavor, sharp, crackly texture and a finishing savor of roasted peanuts.

Zingerman’s Mail Order is featuring delicious Bonito Tinned Tuna this week at a great discount & flat rate shipping!

This is one of the most popular foods we sell.
Here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Writing in the New Yorker, Lauren Collins said Spain is “perhaps the only country in the world where it is desirable to serve food that comes in a can.” She meant it as a compliment—it’s delicious.

Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain’s culinary crown. Ortiz’s fish are all line caught—not netted—hand cleaned and tinned in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish.

Bonito—or albacore, as it’s commonly known in America—is the most mellow and highly prized species. It gets my vote for top everyday eating tuna. It’s nearly the ultimate in convenience food. A quick turn of the lid, and you can serve it with salads, beans, appetizer platters or on its own, dressed with some top-notch olive oil, a squeeze of lemon and a sprinkling of sea salt.
