Dark Chocolate Matzo Bark from the Folks at Fruition

A tasty new confection for Passover
When I was a kid, chocolate-covered matzo would show up at our house on Passover now and again, but what we got back then was nowhere near as good as this great new offering we have from our friends at Fruition. Unlike the low-cost commercial chocolate we got as kids, this is 68% bean-to-bar dark chocolate. Small pieces of matzo are dipped into the chocolate and then tossed with toffee and candied orange. To take it even further, they add a small bit of fleur de sel.
In 2011, Brian and Dahlia Graham started Fruition Chocolate in the Catskills. The Grahams and crew have done great work sourcing beans while actively assisting farmers in the producing countries. Many of the farms they buy from use permaculture methods, and all of their cacao is very carefully processed. You really can taste the difference!
The Dark Chocolate Matzo Bark is great with coffee—try it with the Guatemala El Regalito, that’s our Roaster’s Pick this month. Lovely, too, with bourbon or brandy after dinner. Or, as I do, eat it right out of the can! We have the Dark Chocolate Matzo Bark at the Candy Store and the Deli.
